1. Preheat oven to 450°F
2. Thinly slice your sweet potatoes and add them to a baking sheet with parchment paper.
3. Spray them with avocado oil cooking spray, then add salt, garlic powder, onion powder, and paprika.
4. Bake the sweet potatoes until they are nice and crispy. (about 30 min)
5. Once they are crispy, add cheese, chopped rotisserie chicken, black beans, corn, and sliced jalapeños (optional) on top.
6. Return to the oven for about 10 more minutes to let the cheese melt. Serve with fresh tomato salsa and guacamole.
