Smoked Cowboy Beans

Preheat your smoker to 225

In a skillet:
Cook the chopped bacon until crispy. Remove and set aside.

Sauté onion and bell pepper for 4-5 minutes in the bacon grease.

Add the garlic and cook for 30 seconds

Add ground beef and brown completely

In a smoker safe pan, combine browned meat, cooked bacon, all the beans and remaining ingredients

Stir until mixed well

Smoke uncovered at 225 for 2 to 3 hours , the top may carmelize and the sauce will thicken

Let rest 10 minutes before serving

Ingredients

1 pound ground beef
8 slices thick-cut bacon, chopped
1 large onion, diced
1 bell pepper
3 cloves garlic, diced
1 (28 oz) can baked beans
1 (15 oz) can pinto beans, drained and rinsed
1 (15 oz) can kidney beans, drained and rinsed
1/2 cup bbq sauce
1/4 cup ketchup
1/4 cup brown sugar
1 tbsp yellow mustard
1 tbsp Worcestershire sauce
1 tsp chili powder
1/2 tsp smoked paprika (optional)
Salt & Pepper to taste
