Slow Cooker Tuscan Chicken with Orzo

This lightened up crockpot Tuscan chicken is sooo comforting and delish and so easy thanks to the good ole crockpot! (Serves 6-7)

1. In a greased slow cooker, add chicken, onion, tomatoes, garlic, seasonings, oil, and broth.

2. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours.

3. Shred chicken in crockpot with 2 forks, and then add in dry orzo and Greek yogurt.

4. Stir to combine and submerge dry orzo in liquid. Let cook on high for 20-30 minutes, until orzo is soft.

5.Add in kale and parmesan and stir for 2-3 minutes until kale has wilted and parmesan is melted and creamy.

6. Serve warm and enjoy!

Ingredients

– 2 lb boneless, skinless chicken breast
– 1 yellow onion, chopped
– 1 bag (about 3 oz) of sun-dried tomatoes (in oil or not in oil)
– 4 cloves minced garlic
– 1/2 tsp salt
– 1/4 tsp pepper
– 1/2 tsp oregano
– 1 tbsp olive oil
– 4 cups chicken bone broth (or regular chicken broth)
– 1 1/2 cups dry orzo
– 1/3 cup plain Greek yogurt
– 4 cups chopped kale (or spinach!)
– 1/4 cup grated parmesan cheese
