Pan-Seared Steak

Summary & Instructions

1. Let the steak sit (out of the fridge) for 20-30 minutes.
2. Pan (cast iron recommended) needs to be HOT.
3. Season with salt and pepper (larger the grain the better). 10 plus shakes each side.
4. Once the pan starts smoking, place extra virgin olive oil in the pan.
5. Drop the steaks into the pan 30 seconds each side — SEAR the steak. Sides need to be seared for 30 seconds as well. Continue flipping every minute from here on.
6. 1/2 – 1 tablespoon of garlic depending on you like it.
7. Throw some thyme, butter, more extra virgin olive oil in the pan.
8. BASTE the steak until you medium to medium rare.
9. Enjoy!

Alternate Option – Oven at 400 for 7 minutes and then reverse sear for 2 minutes each side
