Hot Honey Chicken Sliders

Summary & Instructions

– In a bowl, combine chicken pieces, buttermilk, seasonings, pickle juice and hot sauce. Let sit for 3 hours (or overnight in the fridge for best results).
– In another bowl, whisk together flour, cornstarch, paprika, garlic powder, onion powder, mustard powder, cayenne, salt, and pepper.
– Heat oil to 350°F (175°C).
– Remove chicken from marinade, letting excess drip off. Dredge in seasoned flour mixture, pressing to coat well. Rest the floured chicken for 10 minutes before frying
– Fry in batches 4-6 minutes, or until golden brown and cooked through. Drain on a wire rack or paper towels.
– In a small saucepan combine honey, butter, and hot sauce. Mix until well combined. Let it simmer for 3-4 minutes then remove from heat
– Brush chicken with hot honey sauce on both sides
– Slice buns horizontally and brush with butter, place into a pan on medium high heat and toast until slightly golden brown.
– Mix melted butter, parsley and garlic powder.
– Brush over buns.

Ingredients

– 1lb chicken breast, cut in half to create smaller pieces
– 11/3 cups buttermilk
– 1/4 cup hot sauce
– 1/4 cup pickle juice
– 11/2 cup all purpose flour
– 1/2 cup cornstarch
– 2 tsp garlic powder
– 2 tsp onion powder
– 2 tsp cayenne powder (use less if desired)
– 1 tsp smoked paprika
– 1 tsp mustard powder
– 1 tsp salt
– 1/2 tsp black pepper
– 1/2 tsp msg (optional)
– Oil for frying
– Slider buns

Hot honey sauce
– 2 tbsp unsalted butter
– 1/3 cup hot sauce
– 1/2 cup honey
– 1/2 tsp brown sugar
– 1/8 tsp salt
